Solubility: 138.8g per 100ml water at 122°F (50°C).

Sodium acetate - Colorless crystals with slight vinegar odor. Efflorescent (loses combined water molecules on exposure to air). Soluble in water and ether, slightly soluble in alcohol.

When sodium acetate trihydrate crystals are heated, they melt. When this melt cools, it gives a supersaturated solution of sodium acetate in water. By clicking the solution, a nucleation center is formed which causes the solution to crystallize into solid sodium acetate trihydrate again. (ref wikipedia)
